I have watched that video quite a while ago. As far as I remember you will do more work with layers than with channels, and instead of dodge & burn I have chosen a histogram-working-layer and masking that.
(Sorry, I'm in a hurry, maybe later more...)

The dodge and burn tool doesn't have the same abilities as in PS.

Alternatively you can use Tool/Curves or the Replace Color Brush. I prefer Curves, because I don't like painting

But I don't know how to easy combine two layer masks like it is shown in the screencast.

That should not be to difficult: switch the display mode of the top layer to "Linear dodge" (which is a simple add-operation), select to two layers in the layer panel and execute the command "Reduce to One Layer" of the Layer Panels context menu.
