Here is small UI improvement idea for discussion. What if remove gray background on the left side in Layer, Document, Page, Export and other similar panels? This will make UI less random and text will be way easier to read.
Line could be used as separator. Or even better - no separator line at all. Examples:

I must say that problem is not exactly in background difference, but it is in too large difference between darker and lighter parts of the UI. As a result some text and icons always became too low contrast and hard to read and some other text became too contrast and also feels not to pleasant to read:

Here is similar example from other app, where parts of UI also separated by slightly different background colors, but with less difference in brightness which makes UI cleaner and text and icons are way easier to read:
It could be perfect if each part of background color could be user adjustable:

I agree wholeheartedly with the desirability of more control over the base GUI colours. My preference is neither too dark, neither too light. And that's where the current basic gui colour controls are too limited.
Same with the darker GUI settings, as you @shijan mention. There isn't a sufficient level of control over GUI colours' contrast levels with merely the one slider we now have.
That said, I would categorize this as a "nice to have feature" rather than "essential". And from UX research more than 90% of users never touch these kind of customization settings.
Although it would be nice to have more control over dark, mid, and highlight levels in the GUI, and separate text contrast levels as well. Not sure how much time it would take to implement these, and whether it is worth the effort, because these small seeming GUI changes could cascade in a LOT of effort on the part of the developers.
I'd rather have missing core features addressed first.

The color of the interface is not a big problem for me.
